     Italian Stuffed Meatloaf

Ingredients
Ground Beef - 2 pounds (90/10 or better)
2 eggs
Breadcrumbs (to texture of a meatball)
2 cloves garlic Minced
1 med/large Onion - diced
1 Green Pepper - diced
Seasonings Below to Taste-
Italian seasoning, oregano, pepper, garlic powder, onion powder (salt optional)
1 small Jar Italian Tomatoe Sauce
 
FILLINGS
1/4 lb. mortadella
1/4 lb. genoa salami
1/4 lb. ham - whatever type you prefer
1/4 lb. Sweet or hot capicola if desired
1/4 lb. or just a few pepperoni slices
1 large package Shredded Italian cheese blend
(Optional - 1 cup ricotta cheese mixed with Parmesan & tsp parsley)
Optional - mushrooms

Instructions
Mix all ingredients together until it forms a big meatball Lay down a piece of wax paper & roll out meatball flat (10 or so inch flat?) Start layering the fillings of your choice leaving a 1/2 inch space at edges The jar sauce is to add a few dollops in the middle Use wax paper to lift up edge and roll to meet other edge while keeping filling inside Tuck the edges together and roll large loaf onto forearm Place seam side down into 9x11 baking dish Coat top of meatloaf with a light coating of jar sauce bake at 350 for an hour or slightly more until cooked through. After cooked, let sit until it cools enough to cut! The inside should look like a calzone Note- some of the cheese may ooze out into the pan as well as the fat. Just drain it off after.
Serving Suggestions
Serve with Mashed Potatoes & Veggies or with Pasta & Sauce!
