Lightly oil 9x13 baking dish.
Slide lasagna noodles into large kettle of boiling water to which
olive oil has been added to prevent sticking. Cook about 15 minutes
or until tender. Drain. Rinse in cold water.
FOR SPAGHETTI SAUCE- Cook until tender but not brown in large
saucepan the olive oil, chopped onion and garlic. Stir in tomatoes,
tomato paste, water, salt, pepper, oregano, and bay leaf. Simmer
uncovered for 30 minutes.
Preheat oven to 350 degrees.
Line bottom of baking dish with 1/2 noodles, then 1/2 sauce , 1/2
mozzarella, 1/2 ricotta or cottage cheese, then repeat.
Bake for 30 minutes. Let sit for 5 minutes before cutting.
