     VEGETARIAN LASAGNA

Ingredients
1/2 lb. lasagna noodles
1 TBS. olive oil
spaghetti sauce (recipe below)
1 lb. cottage cheese or ricotta
1 pound mozzarella cheese, thinly sliced
2 oz. grated romano or parmesan cheese
SPAGHETTI SAUCE-
3 TBS. olive oil
 
3/4 c. chopped onion
1 clove garlic, minced
1 can (4 c.) tomatoes
2 cans (6 oz. each) tomato paste
1 cup water
1/2 tsp. salt
1/2 tsp. pepper
1-1/2 tsp. oregano
1 bay leaf

Instructions
Lightly oil 9x13 baking dish. Slide lasagna noodles into large kettle of boiling water to which olive oil has been added to prevent sticking. Cook about 15 minutes or until tender. Drain. Rinse in cold water.
FOR SPAGHETTI SAUCE- Cook until tender but not brown in large saucepan the olive oil, chopped onion and garlic. Stir in tomatoes, tomato paste, water, salt, pepper, oregano, and bay leaf. Simmer uncovered for 30 minutes.
Preheat oven to 350 degrees. Line bottom of baking dish with 1/2 noodles, then 1/2 sauce , 1/2 mozzarella, 1/2 ricotta or cottage cheese, then repeat.
Bake for 30 minutes. Let sit for 5 minutes before cutting.
Serving Suggestions
Nobody cares about the meat in lasagna...it's all about the pasta, cheese & sauce! Why add the extra grease and calories?
