2 tbsp fresh basil, thyme, or parsley, finely chopped
1/8 tsp salt
Instructions
Place potatoes in 2-quart pot with enough water to
cover them. Bring to a boil, them simmer, covered,
until fork-tender, about 15-18 minutes, depending on
size of potatoes. Drain.
Or microwave potatoes with 2 tbsp water in a
microwave-safe dish, tightly covered, for 10 minutes
on high. Drain.
In 8 or 10-inch nonstick saute pan melt butter over
medium heat. Add garlic, herbs and salt, then
potatoes. Cook over low heat for another minute,
stirring to coat the potatoes with the seasonings.
