Combine peppers, onion, corn, garlic and cilantro in a medium-
sized bowl.
Add olive oil, vinegar, lime juice, salt and pepper.
Add black beans and tomatoes, toss well
Serve with fresh veggies for dipping, or tortilla chips. Or as a side
salad, put on a bed of greens. Or add roasted chicken. Or eat out
of the bowl with a spoon. Or add avocado...oooh, that would be
good.
