     Vegan Moroccan-Style Chickpeas

Ingredients
15 1/2 oz can chickpeas, rinsed and drained
12 oz tomatoes with green chilis
1/2 C chopped onion
2 cloves garlic, minced
1 T extra Virgin Olive Oil
1 T ground cumin
3/4 C veggie broth
1 T ground Coriander
1/2 T ground ginger
 
salt
pepper

Instructions
1- Saute garlic and onion in olive oil over medium heat for about two minutes.
2- Stir in cumin, ginger, and coriander. Cook until onion is tender.
3- Add chickpeas, vegetable broth and tomatoes with juice and bring to a boil.
4- Cover and simmer for ten minutes.
