     Yellow Peppers and Chickpeas

Ingredients
2 T extra virgin olive oil
1 small onion, roughly chopped
1 small yellow bell pepper, roughly chopped
2 medium zucchini, cut into 3/4-inch chunks
2 Serrano peppers, finely sliced
1 t garlic powder
1/2 t cumin
1/4 t chili powder
2 1/2 C Chickpeas (Garbanzo beans)
 
1/4 C salsa OR diced spicy tomatoes
salt
pepper
2 C cooked rice

Instructions
1- Heat the oil over medium heat in a medium size skillet.
2- Cook together the onion, bell pepper, zucchini, serrano pepper, garlic powder, cumin and chili powder until vegetables are tender.
3- Add chickpeas and salsa. Cover and reduce heat to low until chickpease are heated through. Serve over cooked rice.
