     Lemon Meringue Pie

Ingredients
6 Tablespoons cornstarch
1 1/2 cup granulated sugar
1/4 teaspoon salt
1 1/2 cup water
3 egg yolks
1/4 cup fresh lemon juice
1 Tablespoon grated lemon rind
1 Tablespoon butter
 
For the Meringue-
3 egg whites
1/4 teaspoon cream of tartar
6 Tablespoons granulated sugar

Instructions
FILLING - Combine cornstarch, sugar and salt in a medium non-stick sauce pan. Add water, cook over direct heat, stirring constantly until mixture boils. Mixture will be very thick. Beat a little of this hot mix into the egg yolks to temper them, then add yolks to remaining cooked mix and bring to boil. Remove from heat. Blend lemon rind into lemon juice. Add juice, rind and butter to warm mix. Mix well and pour into baked pie shell.
MERINGUE - Beat egg whites and cream of tarter until frothy. Add sugar gradually, and continue beating until mixture forms stiff peaks. Spoon onto lemon pie and bake at 450 degrees for 4 to 5 minutes until top is lightly browned.
TIP - To keep meringue from shrinking, spread it on the pie so that it touches the crust all the way around.
Serving Suggestions
Let pie cool before serving or it will be runny.
