FILLING - Combine cornstarch, sugar and salt in a medium non-stick sauce pan. Add water, cook over direct heat, stirring constantly until mixture boils. Mixture will be very thick. Beat a little of this hot mix into the egg yolks to temper them, then add yolks to remaining cooked mix and bring to boil. Remove from heat. Blend lemon rind into lemon juice. Add juice, rind and butter to warm mix. Mix well and pour into baked pie shell.
