Core and chop tomatoes. Thinly slice 2 cloves of garlic. Drain a small jar of artichoke hearts. Place all ingredients into a bowl and pour a few tablespoons of flour (to absorb liquid from chicken)

Place the mixture in with the chicken. Season with S&P. Place in 350 degree oven and bake until chicken is almost done (about 50 minutes)

Remove almost done chicken from oven and top with fresh mozzarella. Place the chicken under the broiler for a few minutes (keep an eye on it) until the cheese is golden brown and the veggies are caramelized.

|
When you pull the chicken out of the oven, sprinkle some fresh basil on top and the heat of the dish will wilt the basil. Serve over your favorite pasta.
