     (WOOD) Cajun Stuffed Chicken Breast

1 lb boneless, skinless chicken breasts
4 oz pepper jack cheese, grated
1 cup frozen spinach, thawed and drained
2 TB olive oil
2 TB cajun seasoning
1 TB bread crumbs
sea salt, to taste
fresh ground black pepper, to taste

Preheat oven to 350. Flatten chicken to 1/4 inch thickness. Season with salt and pepper
In a medium bowl, combine pepper jack cheese, spinach, salt and and pepper.
Spoon about a quarter Of the mixture onto each chicken breast. Roll each chicken breast tightly and fasten seams with toothpicks.
Brush each chicken breasts with olive oil. Sprinkle with Cajun seasoning on all sides. Place on a foil lined baking sheet, seam side up. Bake at 350 for 35 to 40 minutes. Remove toothpicks. Slice chicken into medallions to serve.
