     Buffalo Wings with Blue Cheese Bacon Dressing

Ingredients
2 slices bacon
1 tblsp finely chopped onion
1 clove garlic, minced
salt and pepper to taste
3 oz blue cheese, crumbled
1/3 cup mayonaise or sour cream
1/4 cup milk
wings:
 
24 (4 pds) chicken wings
oil for frying
2 tblsp butter, melted
2 tblsp veg. oil
1/4 cup hot pepper sauce
garnish with celery

Instructions
Dressing: Cook the bacon in a skillet until barely crisp. Remove the bacon to paper towels to drain, crumble and set aside. Add the onion to bacon fat in skillet and cook until just softened. Transfer onion and bacon fat to a mixing bowl.
Stir in garlic, salt and pepper, blue cheese, mayo and milk. Blend well, stir in bacon. For the wings: cut wings into 3 sections discarding the tip section. Heat 2 to 3 inches of oil in fryer to 375. Fry the wings in batches, about 8 min.
Keep wings warm in oven while you fry others. Combine butter, oil and hot sauce. Just before serving, stir the hot sauce mixture toss in the cooked wings and serve with blue cheese dressing and celery sticks.
