     Peach BBQ Sauce

Ingredients
1 TBLS. vegetable oil
1/4 cup onions, minced
1/2 tsp. kosher salt
4 large, ripe peaches, peeled & chopped (or 2 cups of frozen peaches, thawed & liquid reserved)
2 TBLS. brown sugar
2 small tomatoes, seeded & diced
1 TBLS. apple cider vinegar
1 tsp. minced chipotle peppers in adobo sauce
2 TBLS. cilantro, minced
 
2 TBLS. freshly squeezed lemon juice

Instructions
Heat oil over medium heat in a saucepan. Add onion and 1/4 tsp. kosher salt and cook until softened, about 5 min.
Add peaches (& juice from thawed frozen peaches) and tomatoes and cook about 10 min. until peaches soften. Stir in vinegar, brown sugar and chipotle peppers; cook about 5 minutes.
Remove from heat; stir in cilantro, lemon juice and remaining salt, and allow to cool. Blend to desired consistency using a blender or food processor.
Return to pan, reduce heat to low and simmer for 15 minutes.
Serving Suggestions
Make chicken or turkey burgers; Also great with pork or grilled salmon
