Heat oil over medium heat in a saucepan. Add onion
and 1/4 tsp. kosher salt and cook until softened,
about 5 min.
Add peaches (& juice from thawed frozen peaches) and
tomatoes and cook about 10 min. until peaches
soften. Stir in vinegar, brown sugar and chipotle
peppers; cook about 5 minutes.
Remove from heat; stir in cilantro, lemon juice and
remaining salt, and allow to cool.
Blend to desired consistency using a blender or food
processor.
Return to pan, reduce heat to low and simmer for 15
minutes.
