     Malteser Cheesecake.

For Base-
100g digestive biscuits.
200g Maltesers.
125g melted butter.
For Filling-
400g cream cheese.
80ml sour cream.
250g icing sugar.
Couple of drops of Vanilla Extract.
115ml double cream.
90g crushed Maltesers
9-10 full Maltesers for top of cheesecake as decoration.

For the base- Grease a round tin, preferably small-medium, with butter, so base doesn't stick.Crush Maltesers and digestive biscuits in a bowl until finely ground. Then melt the 125g of butter, pour into the bowl with the maltesers and digestive biscuits and mix until thick.Put crumb mixture into pan and cover the whole bottom of the pan. Pat down the mixture until compact and make sure there are no gaps left. Put into the fridge for 30 minutes to set.
For the filling- Put the cream cheese, double cream, sour cream and vanilla extract in a bowl and mix until creamy. Crush more Maltesers and then add to the mixture. Mix until fully combined.
To Assemble- Take the tin containing the crumb mixture and put the filling on top, spreading it out all over the top of the base. Be careful to keep it level and leave no gaps. Take a few whole Maltesers and press into top of the cake. Place in the fridge for 2-3 hours to set.
