1 1/2 LB Boneless, skinless chicken breasts- cut into 1 1/2 in. pieces
1 Red bell pepper- cut into 1 in. pieces
8 oz fresh pineapple- cut into 1 in. chunks
2 tablespoons olive oil
Kosher salt & pepper
Instructions
Heat grill to med-high. In a large bowl, toss the
chicken, pepper, pineapple, oil and 1/2 teaspoon
each- salt & pepper. Thread onto skewers.
Grill, turning occasionally, until chicken is cooked
through. 8-10 min.
