     Strawberry Cream Cheese Muffins

Ingredients
3/4 cup Coconut Flour
1/2 scoop Protein Powder (I used Strawberry MuscleTech Phase 8)
3/4 tsp Baking Powder
1/4 tsp Baking Soda
3/4 cup Splenda
4 oz. Low Fat Cream Cheese
1/8 cup Butter
1 Whole Egg
1/4 cup Egg Whites
 
1/4 cup Almond Milk
1/2 tsp Vanilla Extract
1/2 cup Fresh Strawberries (hand picked!)

Instructions
1. Preheat oven to 350 degrees Farenheit. 2. Cream together cream cheese, butter and Splenda. 3. Add eggs, almond milk and vanilla and mix until uniform. 4. In another bowl, whisk together baking powder, baking soda, coconut flour, protein powder and salt. 5. Add dry ingredients to cream/milk/eggs mixture and mix until combined. Mixture will be very thick, like cookie dough. Add egg whites to get the mixture more maleable. 6. Fold in strawberries. 7. Spoon batter into paper muffin cups in muffin tin. Fill about 3/4 full. 8. Bake for 20-25 minutes until the tops are golden then let cool.

These turned out amazing! Not sure if I would make any changes to them. Really enjoyed picking the strawberries and then baking with them! Will try again with blueberries around that season! Versitile recipe, maybe even try pumpkin!
