Ingredients
1 cup chopped roma tomatoes (if they are extra seedy then scrape some off when you slice before chop
1/2 cup chopped yellow pepper
1/2 cup lightly packed fresh sweet basil leaves, stacked, rolled and thinly sliced
1 clove garlic, minced
1 tbsp olive oil
salt and pepper to taste about 1/4 tsp each
Goat cheese
 

Instructions
Combine all the above ingredients together. For the bread- french baquette bread baked and cooled then sliced into 1/4 to 1/2 inch slices. Place on a cookie sheet and brush the top side only with olive oil and cracked fresh pepper over it. Place under broiler until golden. Some pieces may be done before others if they do just take those off and place the others back in. Cool on a wire rack. After they cool I store in a large zip lock bag but I do not close it all the way or it will become soft.
To assemble- Take goat cheese and spread on a slice of bread, place tomato mixture on top of goat cheese. One batch will make 16 pieces.
