     Gnocchi, Brown Butter with Spinach and Pine Nuts

Ingredients
1 (16-oz.) package gnocchi
2 T. butter
2 T. pine nuts
2 garlic cloves, minced
1 (10-oz.) package fresh spinach, torn
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
1/4 c. (1 oz.) finely shredded Parmesan
 

Instructions
Cook gnocchi according to package directions. Drain.
Heat butter in large nonstick skillet over medium. Add pine nuts; cook 3 mins. or until butter and nuts are lightly browned. Add garlic; cook 1 min. Add gnocchi and spinach; cook until spinach wilts.
Stir in salt and pepper. Sprinkle with Parmesan.
Serving Suggestions
Yield- 4 servings
