Grate potatoes with medium size grater of food processor or
manuel grater. drain well to remove all water. In a large bowl,
combine grated potatoes with onion, eggs, flour, baking powder,
salt, and nutmeg or pepper. In a large skillet, slowly heat oil 1/8
inch deep, until very hot, but not smoking. For each pancake, drop
2 tablespoons potato mixture at a time into hot fat. With spoon or
spatula, flatten pancake against bottom of skillet to 4 inches in
diameter. fry 2 to 3 minutes on each side or until golden brown.
serve hot with applesauce, sour cream, or syrup. Yield 12 pancakes.
