     German Potato Pancakes

Ingredients
4 large potatoes
1/4 cup grated onion
2 eggs, slightly beaten
2 tablespoons flour
1/4 teaspoon baking powder
3/4 teaspoon salt
Dash of nutmeg, optional
Dash of pepper, optional
Vegetable oil or shortening for frying
 
Chilled applesauce, sour cream, or maple syrup for topping

Instructions
Grate potatoes with medium size grater of food processor or manuel grater. drain well to remove all water. In a large bowl, combine grated potatoes with onion, eggs, flour, baking powder, salt, and nutmeg or pepper. In a large skillet, slowly heat oil 1/8 inch deep, until very hot, but not smoking. For each pancake, drop 2 tablespoons potato mixture at a time into hot fat. With spoon or spatula, flatten pancake against bottom of skillet to 4 inches in diameter. fry 2 to 3 minutes on each side or until golden brown. serve hot with applesauce, sour cream, or syrup. Yield 12 pancakes.
