     Jalapeno-Cheddar Chicken Melts

Ingredients
3 boneless, skinless chicken breasts
3 T sweet mesquite seasoning or grill seasoning
2 T olive oil
1/4 cup chopped jarred jalapenos
1/2 cup ricotta cheese
6 oz shredded sharp cheddar cheese
5-6 slices nutty, whole grain bread
 

Instructions
Preheat oven to 450F. Toss chicken breasts with olive oil and seasoning. Arrange on a baking sheet and roast until cooked through, about 25-30 minutes. Set aside until cool enough to handle. Meanwhile, lightly toast bread. Set broiler to preheat. When chicken is cool enough to handle (or using two forks), shred into a large bowl and add jalapenos and ricotta. Mix thoroughly. Arrange bread on a baking sheet or broiler pan and mound chicken mixture on top. Evenly distribute cheese across sandwiches. Broil until cheese is melted to your liking. (Watch carefully, it happens quickly!) Remove sandwiches to a plate and enjoy — preferably with a dill pickle spear or two
