Wash the chicken. stuff with bell pepper and onion season with garlic powder and a pat of margarine , onion powder and lemon pepper . Ball up 3 tennis ball size of aluminum foil sit at the bottom of your crockpot and lay chicken on the top of the balls. The balls are there so your chicken is not sitting in the juices. Comes out really juicy and tasty. In crockpot for 4 to 6 hours I lift out and place in a pan after cooking so that the chicken doesn't fall in oils . You may use the oils for gravy if you wish.

Add 2 cans of Rotel and a package of taco seasoning. Cook for 4-6 hours depending on temperature and size of chicken. When done shred chicken and remove bones. Serve on flour tortilla with lettuce, cheese and sour cream. Yummy soft tacos.

Nellie Torres This is a recipe from Puerto Rico I do on regular pot not tried in crock pot. Cut chicken and remove all the skin, place in a pot add 2 cups of water, 1/2 cup cooking wine or red wine, add potatoes on top, cook on low for about 15 minutes. Take 3 cloves of garlic minced, 1/4 cilantro, 4 or 5 sweet peppers one onion chopped, 1/2 can tomato sauce, add to the cooking chicken and cook for and additional 10 minutes. Serve over white rice. You can add celery, carrots or any other veggie you may like.
