2 roasted or grilled chicken breasts (boneless and skinless), diced or cut into 2-inch long strips
1/2 cup mandarin oranges, canned in juice, drained()
2 Tbl sesame seeds, toasted
DRESSING
2 Tbl canola oil
1 tsp sesame oil
1 Tbl honey
3 Tbl rice vinegar
1/2 seasoning packet from the ramen noodle package
1/4 cup juice from mandarin oranges
Instructions
1. Add the dressing ingredients to a small food
processor or small mixing bowl and pulse or beat
until well blended; set aside.
2. In a large bowl, toss together almonds, green
onions, cabbage, dried ramen noodles (crunched up
into small pieces with your hands), and chicken.
3. Drizzle dressing over the top and toss to blend.
Sprinkle sesame seeds over the top and garnish with
mandarin oranges. Serve immediately, or
refrigerate for up to 2 hours.
()Reserve 1/4 cup juice from oranges and use in
dressing.
