     Goat Cheese in Crackling Caramel

Ingredients
6 oz log goat cheese, sliced into 1/2 thick rounds
1/4 c sugar
1/4 c water
6 small clusters of grapes
6 wedges green apple
 

Instructions
Place goat cheese rounds on 6 small plates. Spray cooling rack with nonstick spray and placed over rimmed baking sheet.
Stir sugar and water in small heavy saucepan over medium heat until sugar dissolves. Increase heat and boil without stirring until mixture turns light amber, occasionally brushing down sides of pan with wet pastry brush and swirling the pan, about 6 minutes.
Remove from heat and quickly add grape clusters 1 at a time to caramel. Using slotted spoon, transfer grapes to wire rack. Repeat with each of the apple wedges.
Dip spoon into caramel and drizzle over goat cheese rounds on plates. Garnish with caramelized grapes and apple wedges.
