     Mediterranean Chicken

Ingredients
1 tbsp oil
1 1/4 lbs boneless, skinless chicken breast halves, chopped
2 cups sliced white mushrooms
1 cup sliced red pepper
1 1/2 tsp dried basil (or 2 tbsp finely shredded fresh)
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
3 cups fresh spinach leaves, lightly packed
 
1/4 cup grated Parmesan cheese
1 tbsp lemon juice

Instructions
Heat oil in large frying pan on medium-high. Add chicken. Cook for about 5 minutes, stirring occasionally, until no longer pink inside.
Add next 6 ingredients. Heat and stir for about 5 minutes until red pepper is softened.
Add spinach. Heat and stir for 1 to 2 minutes until spinach starts to wilt.
Add Parmesan cheese and lemon juice. Stir well.
Serving Suggestions
4 servings, each: 250 calories, 8.2 g fat (3.2 g mono, 1.8g poly, 2.2 g sat), 7 g carb, 2 g fiber, 37 g protein, 310 mg sodium.
