     Pork and Apple Skillet

Ingredients
1 tbsp water
2 tsp cornstarch
1 tbsp oil
1 lb pork tenderloin, trimmed, thinly sliced (easier if partially frozen)
sprinkle salt
sprinkle pepper
2 cups shredded red cabbage
1 medium cooking apple (such as McIntosh), peeled, cored, chopped
2/3 cup apple juice
 
1/2 tsp lemon pepper
1/4 tsp dried thyme (or 1 tsp fresh)
6 precooked bacon slices, chopped
1/4 cup toasted walnut pieces

Instructions
Stir water into cornstarch until smooth. Set aside.
Heat cooking oil in large frying pan on medium-high. Add pork, salt and pepper. Cook for 5-10 minutes, stirring occasionally, until pork starts to brown.
Add next 5 ingredients. Stir. Cook, uncovered, for about 5 minutes, stirring occasionally, until cabbage is tender-crisp.
Stir cornstarch mixture. Add to pork mixture. Add bacon and walnuts. Heat and stir for about 1 minute until sauce is boiling and thickened.
Serving Suggestions
4 servings, each: 337 calories, 18.1 g fat (7.6 g mono, 5.3 g poly, 4 g sat), 15 g carb, 2 g fiber, 29 g protein, 293 g sodium.
