     Peach Peppercorn Pork

Ingredients
1 tsp oil
4 bone-in pork chops (about 1 1/4 lbs), trimmed
2/3 cup reduced sodium chicken broth
1 tbsp flour
14 oz can sliced peaches, drained and chopped
2 oz can green peppercorns, drained
2 tbsp medium sherry
2 tsp apple cider vinegar
2 tsp dried thyme
 
1/2 cup finely chopped onion

Instructions
Heat cooking oil in large frying pan on medium. Add pork chops. Cook for 5-6 minutes per side until desired doneness. Transfer to a large serving platter. Cover to keep warm.
Meanwhile, stir broth into flour in small bowl until smooth. Set aside. Combine next 5 ingredients in separate small bowl. Set aside.
Cook onion in same large frying pan on medium for 5-10 minutes, stirring often, until softeneed. Add peach mixture. Heat and stir for 1 minutes, scraping any brown bits from bottom of pan. Stir in flour mixture. Add to peach mixture. Heat and stir about 3 minutes until boiling and thickened. Spoon onto pork chops.
Serving Suggestions
4 servings, each: 250 calories, 7.8 g fat (3.6 g mono, 1.2 g poly, 2.3 g sat), 20 g carb, 1 g fiber, 25 g protein, 200 mg sodium.
