This requires two skillets (one should be non-stick and oven safe). In one skillet doesn't have to be non-stick), heat olive oil over medium heat. Add diced vegetables until bell peppers and mushrooms soften. Add spinach at the end until just wilted.
Pre-heat oven to 350. Remove sausage from the casing and crumble in the non stick skillet. Cook through on medium-high heat and add vegetables to this skillet (try not to add excess liquid/oil from the vegetables).
Add your eggs and quickly stir with the other ingredients so that they are evenly distributed. Do not touch for about 5-7 minutes to allow the sides and bottom to cook.
Place the skillet in the oven and cook until the top is no longer runny (if needed, place under broiler for faster cooking). Remove the skillet and loosen the frittata on the sides with a spatula or knife. Transfer the frittata onto the serving dish of your choice and top with black pepper and shredded cheese. Once cheese is melted, slice and serve. The frittata can be served hot, room temp, or cold.
