     Dill Pickles

Ingredients
18 Cups Water
3 Cups Vinegar
1 Cup coarse salt
1/2 t alum
pickling spice
dill weed
garlic cloves
 

Instructions
Fill sterilized jars with scrubbed cucumbers. Add dill and garlic as desired to each jar. Heat water, vinegar, salt, alum & pickling spice to boiling. Add brine to cover dills and seal. Place in oven a 250 degrees fro 20-25 minuts until stem end has turned lighter color. Leave for about a month before trying them -- they are the best, crispest pickles ever!
Tips- 50 lbs. cukes = about 42 quarts pickles 30 lbs. cukes = about 25 quarts pickles 1 batch brine fills about 12 jars
