     Chicken Bryan

Ingredients
CHICKEN-
6 Large Chicken Breasts
2 tbls EVOO
1/2 tsp Salt
1/2 tsp Pepper
8 oz Goat Cheese room temp
SUN DRIED TOMATO SAUCE-
2 tbs But
1 tbs Finely Chopped Garlic
 
1 tbs Finely Chopped Onion
1/2 C. Dry White Wine
1/4 C. Lemon Juice
10 Pads of Cold Butter
1 1/2 C. Finely Sliced Sun-Dried Tomatos
1/4 C. Fresh chopped Basil
1/2 tsp Kosher Salt
1/2 tsp white pepper

Instructions
Prepare Sun-Dried Tomatoes- Place Butter, garlic and onion in a large skillet over medium heat, Sauté until translucent. Add White Wine, and lemon juice then increase heat to medium heat, simmer and reduce by half. Reduce heat to low add cold Butter one piece at a time. Add Tomatoes, Basil, salt and pepper. Stir and set aside
Prepare the Chicken- Rub Chicken with EVOO, Salt and Pepper and cook on grill for 15-20 Minutes or until no longer pink. Divide the Goat Cheese evenly between breasts. Cook an additional 2 minutes.
Plate the chicken a top with Tomato Mixture
