     Grilled Peaches with Vanilla Ice Cream & Salt Car

Ingredients
Peaches (1 per person)
Good quality vanilla or vanilla bean ice cream
Salted Caramel Sauce (see recipe below)
Salted Caramel Sauce-
3/4 cup sugar
1/2 cup water
1/2 cup plus 2 Tablespoons heavy cream
5 Tablespoons unsalted butter
 
1 teaspoon fleur de sel

Instructions
Slice peaches in half, removing and discarding the pits. Lay peaches cut-side down on a preheated grill. Grill over medium-low heat until peaches are hot and tender (and have really impressive grill marks). Allow to cool for 5 minutes before serving. Top with ice cream and salted caramel sauce. Eat immediately.
Salted Caramel Sauce- o make the salted caramel sauce, combine the sugar and water in a small, heavy-bottomed saucepan with tall sides. Heat, stirring until sugar is dissolved, then bring to a boil. Boil until the entire mixture is a light amber color, like the color of clover honey. Stir in the cream. The mixture will sputter, so stand back, and use a long-handled spoon. And I always wear an oven mitt! Remove caramel from heat, and stir in butter and salt. Pour into a heat-proof serving dish and allow to cool.
