     CHICKEN KABOBS

Ingredients
1/2 C. LEMON JUICE
1/4 C. dry WHITE WINE
2 TBS. OLIVE OIL
2 cloves GARLIC
2 TBS. chopped fresh OREGANO
Grated ZEST of 1/2 Lemon
Salt and pepper to taste
1 1/2 lb. boneless, skinless CHICKEN BREASTS cut in 1 1/2 inch sq. cubes
 
1 ASIA EGGPLANT sliced
1 RED BELL PEPPER cut in 2 in. squares
1 YELLOW ONION cut in about 2 in. pieces
1 ZUCCHINI sliced

Instructions
IN A LARGE BOWL MIX FIRST 7 INGREDIENTS (MARINADE). ADD CHIKEN AND VEGETABLES . MIX WELL TO COAT AND REFRIGERATE AT LEAST 1 HOUR ( 3 or 4 hours is better)
THREAD CHICKEN AND VEGETABLES ALTERNATELY ON EITHER SOAKED WOODEN SKEWERS ORE METAL ONES. Add other things like mushrooms or whatever
PLACE SKEWER ON MIDDLE/PERIMETER OF THE GRILL TURNING OCCASIONALLY UNTIL CHICKEN IS OPAQUE ( 10 - 15 MIN,)
SERVE WITH RICE OR MANGO SALSA RECIPE CAN BE DOUBLED
