3 medium sweet potatoes, boiled, peeled and sliced
1 1/4 cup brown sugar
1 1/2 tbs cornstarch
1/4 tsp salt
1/8 tsp cinnamon
1 tsp grated orange peel
2 tbs butter
1 can apricot halves
1/2 cup chopped pecans
Instructions
Place the potatoes in a buttered 10 x 6 x 1 1/2 inch baking dish.
In a saucepan, combine sugar, cornstarch, salt, cinnamon and orange peel.
Drain apricots and reserve liquid. Stir 1 cup apricot syrup with cornstarch mixture. Cook and stir over medium heat until boiling. Boil for 2 minutes. Add apricots, butter and nuts. Take off heat, stirring until butter melts. Pour over sliced sweet potatoes.
Bake, uncovered, at 375 degrees for 25 minutes.
