     Pumpkin Pie Cafe

Ingredients
4 Eggs
1 1/2 Cups of Sugar
2 Tsp of Ground Cinnnamon
1 1/2 Tsp of Ground Nutmeg
1 Tsp of Ground Ginger
1 Can (12oz) Evaporated Milk
1 Can (28-29 oz) Pumpkin
1 Package Yellow Cake Mix
3/4 Chilled Butter
 
1/4 Tsp Salt
Whipped Cream to Garnish (Optional)
1 Cup of Chopped Pecans (Optional)

Instructions
Preheat oven to 350.
In large bowl, whisk eggs, sugar cinnamon, nutmeg, ginger and salt. Stir in pumpkin and evaporated milk. Pour mixture into an ungreased 9 by 13 baking pan.
Place dry cake mix in a medium bowl. Using a pastry blender or knives, cut butter into cake mix until mixture is crumbly. Sprinkle cake mix over pumpkin mixture then sprinkle with pecans (pecans optional)
Bake 1 hour or until top is golden brown and edges start to pull away from pan.
