     Everything Bagels

Ingredients
1 and 1/4 cup warm water
1.5 tsp sugar
2 tsp (1 packet) active dry yeast
3.5 cups bread flour
1.5 tsp salt
2 tbsp sesame seeds
2 tsp poppy seads
1 tsp caraway seeds
1 tsp coarse grain sea salt
 
1 egg

Instructions
In a bowl, combine the water and sugar and stir to dissolve. Pour in the yeast and allow this to sit for 6-8 min. in a larger bowl, whisk toget ther flour and 1.5 tsp salt. Once the yeast mixture has had time to activate, pour into flour mixture and stir until a crumbly dough forms. Turn out into a fluored surgace and knead for 6-7 min until the dough begins to become elastic like. Place the dough in a lightly oiled bowl, cover and allow to rise in a warm place for 1 hour.
Turn the dough out onto a lightly floured surface and divide into eight equal peices. Shape into a ball and press finger through middle for the hole. Once shaped, allow to rest for 10 min. Place them in a boiling pot of water (they should float). Cook for 45 seconds to 1 min on each side and place on baking sheet. Whisk egg plus 1 tsp water and brush over each bagel. Sprinkle on the seeds.
Bake at 425 for 20 min,
