12oz (2-3) boneless skinless chicken breasts, cut into 1/2 inch cubes
|
|
1 medium white onion, chopped
|
|
1 1/2 tsp garlic powder
|
|
1 Tbsp canola oil
|
|
2 (15.5oz) cans great northern beans, rinsed & drained
|
|
1 (14.5oz) can low sodium chicken broth
|
|
2 (4oz) cans diced green chiles
|
|
1 tsp salt
|
|
1 tsp ground cumin
|
|
|
|
1 tsp dried oregano
|
|
1/2 tsp fresh ground black pepper
|
|
1/4 tsp cayenne (red) pepper
|
|
1 cup (8oz) light sour cream
|
|
1/2 cup heavy whipping cream (or sub half & half)
|

|
|
|
|
|
|

Instructions |
|
|
In a large saucepan, saute the chicken, onion & garlic powder in oil
until chicken is no longer pink.
|

|
Add beans, broth, chiles & seasonings. Bring to a boil. Reduce
heat; simmer, uncovered for 30 minutes.
|
|
|
Remove from heat; stir in sour cream & cream.
|
|
