     TORTELLINI WITH PEAS & TARRAGON

Ingredients
1 pound frozen cheese tortellini
2 TBS. olive oil
1 onion, chopped
3 TBS. unsalted butter
2 cloves garlic, finely chopped or 1 tsp. jarred minced
1-1/2 cups frozen peas
Kosher salt and pepper
2 TBS. chopped fresh tarragon
1/2 cup grated Parmesan, divided
 

Instructions
Cook the tortellini according to the package directions. Meanwhile, heat the oil in a large skillet over medium heat. Add onion and cook until soft, about 6 minutes. Increase heat to medium-high. Add the butter and cook until it turns golden brown, about 3 minutes. Stir in the garlic, peas, 1/2 tsp. of salt, and 1/4 tsp. pepper and cook until heated through, 2 to 3 minutes.
Add the tortellini, taragon, and half of the Parmesan and toss.
Divide among bowls and sprinkle with the remaining Parmesan.
Serving Suggestions
Serve with garlic bread.
