     Mexican Chip Casserole

Ingredients
1 lb. hamburger
1 medium onion, chopped
1 garlic glove, minced
1 can (10-3/4 oz.) Cream of Mushroom soup
1 can (11 oz.) Mexicorn, drained
1 can (4 oz.) chopped green chilies
1 can (10 oz,) enchilada sauce
1 pkg. (10-14 oz.) Fritos corn chips
1 to 2 cups shredded Colby-Jack cheese
 

Instructions
In a skillet, cook hamburger (seasoned with salt and pepper), onion, and garlic over medium heat until meat is no longer pink and onion is tender; drain. Add soup, corn, chilies, and enchilada sauce; mix well. Pour the meat mixture into an ungreased shallow 3-qt. baking dish and spread to evenly cover the dish. The Fritos will get soft if they are mixed in with the meat, so you may want to mix some in, add a layer on top before topping with cheese, and save some to sprinkle on right before eating for extra crunch. Bake uncovered at 350 degrees for 10-15 minutes or until heated through.
