Place vegetables and broth in large saucepan, cover. Bring to boil on medium-high heat. Reduce heat to low, simmer 10 min. or until vegetables are tender. Mash vegetable if desired, I preger them chunky.
Stir in velveeta and cook until melted and soup is heated through, stirring frequently. Soup will become thicker as it simmer with the lid off.
Cooked chicken can be added for the meat lovers!
