1/4 to 1/3c cider vinegar (to taste and depending on the acidity of your tomatoes)
1/2 ts salt
Instructions
Puree tomatoes in a blender until smooth.
Cook onion in olive oil in saucepan over medium heat
until softened. Add remaining ingredients. Simmer,
uncovered, stirring occasionally for 1 hr. Do not
allow sauce to scorch.
Puree ketchup in blender, in 2 batches until smooth.
Be careful when blending hot liquids. Cover and
chill for at least 2 hrs.
