     Spinach Ricotta Pie

Ingredients
9 inch pie crust, unbaked
1/2 lb. chopped spinach
1 small onion, diced
butter
1 lb. ricotta cheese
3 beaten eggs
1/2 tsp. salt
black pepper
1/2 tsp. basil
 
3 Tbsp. flour
1/2 cup sharp cheese, grated
dash of nutmeg
1 cup sour cream
paprika

Instructions
Saute chopped spinach and onion in butter. When done, mix with the ricotta cheese, eggs, salt and pepper, basil, flour, sharp cheese, and nutmeg. Spread into unbaked pie crust. Top with sour cream; spread to edges of crust. Sprinkle generously with paprika. Bake at 375 degrees for 40-45 minutes.
