     Smoked Salmon, Asparagus, and Avocado Salad

Ingredients
3 1/2 oz asparagus spears
1 medium ripe avocado
1/2 tsp lemon juice
lettuce, mesclun mix
4 oz smoked salmon slices, cut into bite-sized pieces
half a small red onion, finely sliced
pinch of sugar (for dressing)
lemon wedges
Basic Balsamic Salad Dressing
 

Instructions
Bring a large pan of salted water to a boil; add the asparagus and cook for 4 minutes. Refres under cold running water and drain again. Cut into bite-sized pieces and set aside.
Cut the avocado in half lengthwise, then cut into bite-sized pieces. Brush with lemon juice to prevent discoloration.
To make the dressing, add a pinch of sugar and a squeeze of lemon juice to the Basic Balsamic Salad Dressing; shake.
Assemble and serve!
Serving Suggestions
with a side of whole-wheat bread and good butter
