     Chewy Chocolate Chunk Cookies

Category   Desserts - Breads
Sub Category   None

Ingredients
2 1/4 c. flour
1 t. baking soda
1 1/2 t. corn starch
1/2 t. salt
3/4 c. melted butter
3/4 c. brown sugar, loosely packed
1/2 c. sugar
1 large egg - 1 egg yolk
2 t. vanilla

1 c. chocolate chunks (I chop up good quality dark chocolate)

Instructions
Toss together flour, baking soda, cornstarch and salt in large bowl. Set aside.
In a medium sized bowl, wish the melted butter, brown sugar and white sugar together until no lumps remain. Whisk in egg, then egg yolk then vanilla. Add in dry ingredients slowly and mix. Fold in chocolate. Cover and chill for 2 hours (up to 3 days).
Remove dough from fridge and allow to soften for 10 min. Preheat oven to 325
Roll dough, 3 T. at a time, into (tall) balls. (making them tall keeps them from spreading too much) Bake for 11-12 min. They will be underbaked, do not remove at this time!!! Allow to cool on sheet for 10 min before moving to a wire rack to cool completely.
Serving Suggestions
These cookies WILL be thick and chewey. If not, you did not follow all instructions.
