Preheat oven to 375 degrees.
Lightly grease a 12-cup muffin tin.
Put all of the ingredients in a bowl and combine until well mixed.
Form balls with your hands - they should be loosely shaped but in a ball form - don't pack them.
Place in the muffin tins.
Bake for 40 - 45 minutes.
You can turn the remaining portion of tomato sauce into a simple pasta sauce by adding diced or crushed tomatoes, garlic, butter, onion, and some herbs and spices.
Serve with zucchini pasta or spaghetti squash and low carb/low sugar pasta sauce.
