3 granny smith apples, peeled, cored, and finely chopped
1/2 t ground cinnamon
1/4 t ground nutmeg
1 C firmly packed brown sugar
1 C flour
1/2 C quick oats
1 stick butter, softened
1/2 C caramel topping
Instructions
Preheat oven to 350. In a medium bowl, combine
flour and brown sugar. Cut in butter with a pastry
blender until mixture is crumbly. Press into a 9 X
13 baking pan that has been sprayed. Bake 15
minutes. In a large bowl, beat cream cheese with
3/4 C sugar in an electric mixer at medium speed
until smooth. Add eggs 1 at a time, and vanilla.
Stir to combine. Pour over warm crust. In a small
bowl, stir apples and remaining 2 T sugar,
cinnamon, and nutmeg. Spoon evenly over the cream
cheese mixture. Combine the last four ingredients
to make the streusel topping. Put topping over
cream cheese layer. Bake 40 to 45 minutes or until
filling is set. Drizzle with caramel topping and
let cool. Serve cool and enjoy!
