Remove chicken backbone and flatten so it will lay evenly in pan. Combine first 7 spices and rub on chicken, especially under the skin. Place into plastic sealable bag and chill for 30 minutes.
Combine O.J.,limes, vinegar,1/4 cup olive oil, sliced garlic, 1/4 Cup rum into mixing bowl for marinade. Add chicken to marinade and chill for at least one hour.
Shake off extra marinade and place in pan, skin side down, with 4 Tbl olive oil, over medium-high heat and sear When chicken is golden brown, flip chicken and add 1/2 Cup marinade into pan. Place pan in oven and bake chicken at 300 deg. for 25 minutes until an internal temp. of 165 deg. Remove chicken and brush with Mojito Glaze. Place under broiler for 5 minutes.
Prepare Mojito Glaze-In medium pot place 1/2 Cup rum, chicken broth and brown sugar. Reduce by 1/3 over high heat. Whisk together 3 Tbl water and cornstarch. When rum mixture is reduced, add cornstarch mixture slowly and whisk for 3 minutes until thickened. When glaze is at desired thickness, add mint leaves and transfer to small bowl. Season with salt and pepper.
Serve more glaze on the side.
