Mix all of the dry ingredients together. Add the coconut oil and maple syrup and stir until all is coated. Divide mixture between 2 cookie sheets covered with parchment paper. Spread out the mixture. Bake at 275 degrees for 1 hour. Stir the mixture at least once during the cooking.
You should be able to tell that the mixture is browning. After 1 hour taste and make sure there is enough sweetness to the granola. If you want a little more pour the mixture in a bowl while still hot and pour a little more maple syrup and mix well.
I alternate the nuts I use. Sometimes I use pecans and walnuts, sometimes almonds and pistachios. You can use whatever you want. Also you can add craisins after the granola has cooled, or dark chocolate chips. Anything you like.
