2 medium zucchini cut into 1 1/2 in. chunks (about 3 c.)
4 ears of corn cut into 1 1/2 in. pieces
1 lb. uncooked, peeled, deveined shrimp
8 thin slices lemon
Instructions
Heat oven to 450. In a large bowl combine oil, garlic, thyme, and salt. Add zucchini, corn, and shrimp. Toss.
On each of 4- 14X18 in. sheets of heavy-duty foil, place 1/4 of the shrimp mixture in center. Top each with 2 lemon slices. Bring long sides together and fold, leaving room for steam to circulate. Seal ends.
Place packets in a single layer on a large baking sheet. Bake 15 min. Remove from oven and let stand 5 min. before opening. Serve immediately.
Put everything in a skillet instead of foil packets. Didn't cook well in foil. Had to put it all in a skillet in the end for it to finish cooking. Worked better once it went into a skillet.

Easy! Tasted good. Light summer meal! Doubled for 6 of us. Only a little bit left over.
