4 tsp. minced fresh rosemary, or 2 tsp. dried crumbled
I use boneless skinless breasts instead
Instructions
Position a rack in the center of the oven and preheat to 400 degrees.
Rinse and pat dry chicken pieces. Season liberally with salt and
pepper.
In a bowl, toss together onions, garlic, rosemary and 2 TBS. of
the olive oil. Spread half of onion mixture in a shallow baking
dish or roasting pan just large enough to hold the chicken pieces
in a single layer. Arrange the chicken pieces skin side up on
top, then cover with the remaining onion mixture. Drizzle
remaining 2 TBS. olive oil over the chicken.
Bake chicken until dark meat pieces (if any) exude clear juices when
pricked deeply with a fork, about 45 to 55 minutes.
