1.5 cups Yukon gold potatoes, peeled and diced

1/4 cup heavy whipping cream
|

2 tbsp butter
|

1/4 tsp salt
|

1/8 tsp pepper

Instructions |

|
Place the potatoes in a 1-quart saucepan and cover with water. Bring the water to a boil and cook the potatoes until tender, about 15 minutes.
|

Drain the potatoes and return them to the saucepan. Add the cream, 2 tablespoons of butter, 1/4 teaspoon salt, and 1/8 tsp pepper.
|

|
Use a potato masher to mash the potatoes until smooth. Cover the pan with a lid and set aside until ready to use.
