     Sweet and Sour Meat Loaf

1 egg
1 lb ground beef
1/2 lb ground pork
1/2 cup plain bread crumbs
1/4 cup sweet and sour sauce, plus 4 tbsp
1 tbsp dried minced onion
1/2 tsp garlic pepper blend
1/4 tsp salt
3-4 green or red bell pepper rings
3-4 drained canned pineapple slices

Heat oven to 350F. Beat egg in large bowl. Add all remaining meat loaf ingredients (exclude rings, slices, and 4 tbsp sauce); mix well. Press mixture firmly in ungreased 8x4-inch loaf pan. Bake at 350F. for 40 minutes.
Remove meat loaf from oven. Spread about 3 tablespoons sweet-and-sour sauce over loaf. Arrange bell pepper rings and pineapple slices over sauce. Brush with remaining tablespoon sauce.
Return to oven; bake an additional 25 to 30 minutes or until meat loaf is thoroughly cooked in center and meat thermometer registers 160F. Cover with foil; let stand 5 minutes before cutting meat loaf into slices.
