     Garlic Mayonnaise

Ingredients
1 large egg
2 tbsp Dijon mustard
2 tbsp minced garlic
juice of 2 lemons
Kosher salt and fresh ground pepper
2 cups vegetable oil
 

Instructions
Pulse the egg, mustard, garlica nd lemon juice in a food processor fitted with a metal blade.
Season with salt and pepper to taste.
With the machine running, add the oil in a steady stream until the mixture is pale in color and thick, Transfer the Mayonnaise to a bowl.
Cover and refrigerate for at least 1 hour.
