     Pizza Dough

Servings   makes 3 Pizzas

1 pkg active dry yeast
1 tsp sugar
1 cup of warm water
1 Tb of Kosher salt
Extra virgin olive oil
3 cups Flour a little more for dusting

In a large bowl, combine the yeast, sugar and warm water, stir gently to dissolve. Let the mixture stand until the yeast comes alive and starts to FOAM,about 5-10 minutes Then add the salt and 2Tbs of olive oil to the bowl after it has foamed, Add the flour a little at a time until all the flour has been added. Get a feel for the dough by sweezing a small amount together,if its crumbly add a little more water, if its sticky add more flour-1TBS at a time. Mix the dough until it gathers into a ball, should take 5 minutes. Turn the dough into a lightly floured surface and fold it over a few times, kneading until its smooth and elastic. Form the ball into a roung and place into a lightly oiled bowl,turning it over to coat the whole ball THEN Cover with Plastic Wrap and let it rise in a warm spot until it doubles in size about 1HOUR This is a good time to place the Pizza Stone in Oven and Preheat to 400-450 degrees so the stone gets hot to bake the Pizza Once the dough is done divide
into 3 equal pieces. Cover and let rest it will be easier to roll out. You Can freeze the dough in the 3 sections that you separated or use. Roll out a section of the dough into 12 inch circle with rolling pin and about 1/8 inch thick. Dust a Pizza Paddle wih flour and slide it under the Pizza dough. Brush the crust with a thin layer of Olive Oil(I use a small paint bruash) Then add your favorite toppings!! Toppings- eg, Mozzarella cheese shredded, Provalone cheese and Parmesian cheese, Pizza Sauce first then the cheeses,Peppers, salami sliced very thin tomatoes etc Then slide the Pizza onto the very hot stone and bake for 12-15 minutesl, until the crust is golden and crisp.(depends on your oven) Repeat with the remaining dough!! Enjoy!!

Serve with a nice salad, Wine etc
